While studying Interior Design at The University of Akron, Shawna Rollheiser-Schultz found that baking cupcakes relieved stress and delighted her classmates, including her now-husband, Eric Schultz. An assignment to design a restaurant inspired her to think bigger about her hobby, and A Cupcake a Day was born. Located near the square in downtown Medina, Rollheiser’s shop offers high quality cupcakes in a wide selection of cocktail-inspired flavors, like Strawberry Champagne, Cleveland Whiskey and Irish Car Bomb, along with non-alcoholic choices, like Chocolate Raspberry Truffle and Ice Cream Sundae. Rollheiser also hosts decorating parties and “Mom & Me” events. Naked Cakes—un-iced and decorated with fruit and/or flowers—are trending among her many bridal clients. An akronlife “Best of the City” winner for Best Cupcakes, Rollheiser is hoping to expand in the future—her kitchen just isn’t big enough for the growing demand.
