Truly Yours, All Over

In the mid-'80s, when I first started working for a certain professional soccer coach, he used to love to hold club management meetings at Yours Truly in Hudson. At the time, I was vaguely aware that this was a local chain, owned and operated since 1981 by the Shibley family. And, like many such operations, it featured a family atmosphere, and some unique dishes.

Nothing much has changed over the years, except for a few additions to the menu, most of which are healthy options, and a lot more locations. Of course, one look at a “regular” order of NotSo Fries (they're not so very ordinary), dripping with melted cheese and redolent with huge scoops of sour cream, and you can see why they might want to have some “healthy” offerings, just to balance things out.

There is a full range of burgers and salads on the menu, including some options you won't see other places. Recently, I tried a fish sandwich (Friday comes with several fish specials) that was just about perfect...the breading was very light and crispy, the fish itself moist and flavorful, the condiments well-chosen, and the plating colorful and appetizing. That's a lot to say about a fish sandwich.

At that same meal, we also sampled a Greek Salad that was nicely sized, not overpoweringly large. It was very tasty, and offered up an abundance of feta cheese with black Greek olives. Keeping with a Mediterranean theme, we also tried out an order of Hummus. Admittedly, I'm not a big fan, as I often find this Middle Eastern staple a bit bland for my taste. This version came with a lot of chopped ripe tomatoes and pita bread, and I thought it was herbed a bit more than usual, so I liked it.
